Believed to have originated back in the 15th century, bruschetta is a traditional Italian appetizer—or antipasto—as the term is known in Italy. In its most basic form, bruschetta consists of grilled bread rubbed with garlic and topped with olive oil and salt. However, Chef Adam takes things a step further with this rendition of the Italian classic. He marries the bold, intense roasted tomatoes and creamy burrata cheese that will leave your palate craving more of this exceptionally well-balanced complexity of flavors.
What adds to the special nature of this recipe is its muse, Archer Roose Bubbly Rosé. This sparkling rosé hails from Veneto, Italy. Boasting with aromas such as rose, white fruits and wild strawberries–Bubbly Rosé is the ideal companion for the bruschetta.

Archer Roose Bubbly Rose Tomatoes 1 pint of cherry tomatoes Extra virgin olive oil, as desired Kosher salt, as desired Black pepper, as desired Archer Roose Bubbly Rosé, as desired To serve 2 pieces of burrata cheese, quartered 4 thick slices of sourdough bread, grilled 8 leaves fresh basil 2 Tablespoons of crispy onions (such as French’s) Extra virgin olive oil, as desired |

For the Archer Roose Bubbly Rose Tomatoes: Preheat oven to 450F. Toss the cherry tomatoes with olive oil, salt and pepper, then place in a single layer on a lined baking tray. Roast for approximately 10 minutes, or until the tomatoes begin to blister. Once cooked, remove from the oven and place in a small bowl. Cover with Archer Roose Bubbly Ros and let marinate for at least 15 minutes, or up to overnight, before removing from the liquid. To serve: Place the burrata on top of the grilled bread with the marinated tomatoes. Garnish with basil leaves, crispy onions, and a drizzle of olive oil.
